Ingredients:


For the crust:
1 cup almond flour
1/4 cup coconut oil, melted
2 tablespoons maple syrup
A pinch of salt
For the matcha layer:
1 cup raw cashews, soaked and drained
1/4 cup coconut cream
2 tablespoons matcha powder
3 tablespoons maple syrup
1 teaspoon vanilla extract
For the cream layer:
1 cup raw cashews, soaked and drained
1/4 cup coconut cream
3 tablespoons honey or agave syrup
1 teaspoon vanilla extract
Toppings:
Chopped pistachios
White chocolate drizzle (optional)


Directions:


Line an 8×8-inch square baking pan with parchment paper.
Combine the almond flour, melted coconut oil, maple syrup, and a pinch of salt in a bowl. Press the mixture into the bottom of the prepared pan to form a crust.
For the matcha layer, blend the soaked cashews, coconut cream, matcha powder, maple syrup, and vanilla extract until smooth. Spread over the crust and freeze until set, about 1 hour.
For the cream layer, blend the soaked cashews, coconut cream, honey, and vanilla extract until smooth. Spread over the set matcha layer and freeze again for at least 3 hours.
Before serving, sprinkle with chopped pistachios and drizzle with melted white chocolate if desired. Slice into bars and serve.
