Ingredients:


For the Crust:
1 1/2 cups graham cracker crumbs
1/3 cup unsalted butter, melted
1/4 cup granulated sugar
For the Pistachio Layer:
1 cup shelled pistachios, ground
1 cup cream cheese, softened
1/2 cup confectioners’ sugar
1/2 teaspoon almond extract
For the Blackberry Layer:
2 cups fresh blackberries
1/2 cup sugar
1 tablespoon cornstarch
2 tablespoons water
For the Cream Cheese Layer:
2 cups cream cheese, softened
1/2 cup confectioners’ sugar
1 teaspoon vanilla extract
Garnish:
Whole blackberries
Chopped pistachios


Directions:


Combine graham cracker crumbs, melted butter, and granulated sugar and press into the bottom of a lined baking dish. Refrigerate.
Blend the ground pistachios, cream cheese, confectioners’ sugar, and almond extract until smooth. Spread over the crust.
Cook blackberries, sugar, cornstarch, and water over medium heat until thick. Cool slightly and pour over the pistachio layer.
Mix cream cheese, confectioners’ sugar, and vanilla extract until smooth. Spread over the blackberry layer.
Refrigerate for at least 4 hours. Garnish with whole blackberries and chopped pistachios before serving.
