Ingredients:
Dates, 170 gr. (6 oz.) – soaked in cold water for 15 minutes
Roasted Cashews, 50 gr. (1.8 oz.)
Almonds, 50 gr. (1.8 oz.)
Walnuts, 25 gr. (0.9 oz.)
Pine Nuts, 50 gr. (1.8 oz.)
Pumpkin Seeds, 25 gr. (0.9 oz.)
Sunflower Seeds, 25 gr. (0.9 oz.)
Honey, 35 ml. (1.2 fl oz)
Zest of one orange
Vegetable oil, for hands
Directions:
Soak dates in cold water for 15 minutes, then drain.
Chop cashews, almonds, walnuts, pine nuts, pumpkin seeds, and sunflower seeds to a medium size.
Lightly fry the seeds in a frying pan and let cool.
Remove the pits from the dates and add them to a blender along with the chopped nuts and seeds.
Pour in the honey and add the orange zest, then blend until the mixture is well combined but still has some texture.
Spread the mixture onto a baking tray (21cm x 12cm) lined with baking paper.
Lightly oil your hands with vegetable oil and press the mixture firmly into the tray, smoothing the top.
Place in the freezer overnight to set.
