Ingredients:
For the cupcakes:
1 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup whole milk
1/2 cup white chocolate chips, melted
For the honey pistachio filling:
1/2 cup shelled pistachios, finely chopped
1/4 cup honey
For the frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
1 tsp vanilla extract
2 tbsp heavy cream
For garnish:
Whole pistachios
Honey drizzle
Directions:
Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
Mix flour, baking powder, and salt. In another bowl, cream butter and sugar, then add eggs, vanilla, and melted white chocolate. Alternate adding dry ingredients and milk to the mixture.
Fill liners 2/3 full and bake for 20 minutes or until a toothpick comes out clean. Cool completely.
Mix chopped pistachios with honey for the filling. Core each cupcake and fill with the mixture.
For frosting, beat butter until fluffy, add powdered sugar, vanilla, and heavy cream.
Pipe frosting onto cupcakes and garnish with whole pistachios and a honey drizzle.
