  • 1 teaspoon vanilla extract
  • 3 large eggs

For the baklava layer:

  • 1 cup chopped walnuts
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 8 sheets phyllo dough, thawed
  • 1/2 cup unsalted butter, melted

For the syrup:

  • 1/2 cup honey
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1 teaspoon lemon juice

For garnish:

  • Whole walnuts
  • Fresh mint leaves

Directions:

  1. Preheat oven to 325°F (163°C).
  2. Mix ground walnuts, graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, beating well after each addition. Pour over crust.
  4. Toss chopped walnuts with cinnamon and sugar. Place a sheet of phyllo on a work surface; brush with melted butter. Repeat with remaining phyllo sheets and butter. Sprinkle the walnut mixture over the top phyllo layer.
