2 cups granulated sugar

2 eggs

1 cup buttermilk

½ cup oil

2 tsp vanilla extract

1 cup boiling water

1 lb cream cheese, softened

½ cup granulated sugar

2 tsp vanilla extract

1 cup granulated sugar

6 tbsp salted butter, room temperature

½ cup heavy cream, room temperature

1 tsp salt

Directions:

Start by preheating your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

In a large bowl, whisk together the dry ingredients for the cake. Add eggs, buttermilk, oil, and vanilla, and mix until smooth. Gradually stir in boiling water.

Divide the batter between pans and bake for 30-35 minutes. Let cool.
